Birds Nest Soup Recipe

Serves 6 


•    8 oz bird’s nests
•    1 tablespoon cooking oil
•    1 tablespoon fresh ginger root (chopped)
•    4 oz chicken (diced)
•    4 oz mushrooms (diced or sliced)
•    8 oz can of quail eggs (drained)
•    6 cups of chicken stock
•    2 tablespoon cornstarch (mix with 2 tablespoon of cold water)
•    1 cup of water

1.    Soak bird’s nest overnight. Then remove water and clean.
2.    In a pan, cook the diced chicken then set aside.
3.    In a pot, add cooking oil and boil the chicken stock then add in birds nest. Let it heat for 10 minutes.
4.    Add the rest of the ingredients and let it heat for another 10 minutes.
5.    Add in cornstarch and stir.
